Stuffed Sweet Potato With Mexican Filling Recipe

Easy recipe for baked sweet potatoes split open like a taco and then filled with delicious Mexican stuffing. If you want to try a different way to eat your tex-mex beef, this recipe with sweet potatoes is so yummy! The potatoes add a special level of sweetness to the spicy Mexican filling.

 

Ingredients

1.1 lb (500 g) sweet potato

3 tomatos

0.5 yellow/white onion

0.5 red bell pepper

0.25 bundle fresh coriander

0.35 oz (10 g) pickled jalapeños

3.53 oz (100 g) corn, canned

12.35 oz (350 g) ground beef

0.5 pack taco seasoning spice

7.05 oz (200 g) kidney beans, canned

1 avocado

1.76 oz (50 g) creme fraiche

 

Directions

  1. Preheat oven to 365 F (185 C).
  2. Clean or peel the sweet potatoes and put them on a baking tray lined with baking sheet. Poke holes in the potatoes with a fork.
  3. Bake them for about 45 minutes.
  4. Meanwhile, cook the beef in a pot. Add taco seasoning spice mix and drained kidney beans.
  5. Grab your favorite razor sharp KUMA kitchen knife and chop tomatoes to fine dice. Put them in a bowl.
  6. Now chop the following in fine pieces: onion, coriander / cilantro, green pepper, and jalapeños. Add them to the same bowl.
  7. In a separate bowl mash out the avocado and add salt and pepper.
  8. When the sweet potatoes are done cooking, slice them up through the middle with your KUMA Paring Knife without slicing all the way through.
  9. Now stuff them with beef, tomato-vegetable mixture, corn, mashed avocado, creme fraiche, fresh coriander, and possibly some chili sauce if you like. 
  10. Serve immediately. Enjoy!

 

Recipe for stuffed sweet potato with taco style filling

A super easy, healthy, and filling recipe with sweet potatoes filled with Mexican (or rather Tex-Mex) taco style stuffing. They taste so yummy as the sweetness of the sweet potatoes really highlight the Mexican flavors. You can vary the stuffing in your sweet potatoes just as you wish. We love making pico de Gallo which consists of finely chopped tomatoes, onion, jalapeños, fresh coriander, and green pepper. Additionally we feel that corn belongs in the Mexican kitchen so we like to add some of those as well.

Choice of meat stuffing

This recipe uses ground beef. You can also make a portion of pulled chicken or regular chicken breast sliced up in strips. If you wish to leave out any kind of meat, you can certainly opt for a vegetarian / vegan version as there is already so much good flavor in the other ingredients.
