Salmon with Crispy Topping and Sweet Potato Fries

Description

Easy and delicious recipe for oven baked salmon with crispy topping, sweet potato fries, and homemade garlic dip. Easy, healthy, and oh-so good dinner!

 

Ingredients

Salmon and topping

8 oz (225 g) salmon filet

0.35 oz (10 g) panko bread crumbs

0.53 oz (15 g) parmesan

0.25 bundle fresh parsley

1.5 tablespoon olive olie

Sweet Potato Fries

1.1 lbs (500 g) sweet potato

3 tablespoons vegetable oil

salt/pepper

Beans

10.58 oz (300 g) frozen edamame beans without shell

0.25 bundle fresh parsley

0.5 lime fruit

salt/pepper

Garlic Dressing

3.53 oz (100 g) creme fraiche

1 garlic clove

0.25 bundle fresh parsley

0.5 lime fruit

salt/pepper

 

Directions

Dressing

  1. Find your trusty KUMA Chef’s Knife and slice garlic and parsley to fine pieces. Mix it with creme fraiche and the juice from a half lime fruit. Taste with salt and pepper, and possibly a little bit of sugar. Put in the fridge until ready to serve.

Edamame beans

  1. Put the frozen edamame beans in a sieve and wash in lukewarm water until thawed.
  2. Drain them from water and put them in a bowl.
  3. Grab your KUMA knife and chop parsley to fine pieces.
  4. Put 3 tablespoons of parsley aside for later. Then mix the beans with remaining parsley, a half lime fruit, and taste with salt and pepper.

Fries and Salmon

  1. Peel sweet potatoes.
  2. With your KUMA Paring Knife cut the sweet potatoes into French fry pieces.
  3. Mix the fries with oil, salt, and pepper.
  4. Spread them out on a baking tray covered with a baking sheet.
  5. First bake them on 390 F (200 C) for 25 minutes. Meanwhile you can begin preparing the topping for the salmon. Grate parmesan cheese as finely as possible. Mix parmesan with panko crumbs, about 3 tablespoons finely chopped parsley, and pepper. Don’t add salt as the parmesan already has salt in it.
  6. Remove baking tray from oven after the 25 minutes have passed. Stir around the fries a bit so they’ll get prepared on the other side and then push them all to one side.
  7. Place the salmon filets with skin side down on the free side of the baking tray.
  8. Spread a little bit of oil over the salmon and then cover it your topping mixture. Press down on the topping mixture lightly to make sure it’ll stick.
  9. Put the baking tray back into the oven for another 10-12 minutes. When white material starts coming out from the sides of the salmon you will know it’s done.
  10. Serve your salmon with sweet potato fries, beans, and home garlic dressing. Enjoy!
