Oven Baked Pork Chop Casserole Recipe

Description

A wonderful recipe for juicy oven baked pork chops in a tasty and savory tomato sauce with onion, garlic, bell pepper and mushroom. Delicious and juicy pork with a side of bulgur. We love meals like this that pack a ton of flavor from the meat and veggies.

 

Ingredients

8.82 oz (250 g) pork chops

1 yellow onion

1.5 garlic cloves

1.5 tablespoon vegetable oil

salt/pepper

1 red bell pepper

4.41 oz (125 g) mushroom

7.05 oz (200 g) canned diced tomato

1.05 cups (2.5 dl) cooking cream

1 teaspoon paprika

0.5 vegetable bouillon cube

0.5 bundle fresh parsley

7.05 oz (200 g) bulgur

 

Directions

  1. Pre-heat oven to 375 F (190 C).
  2. Find your trusty KUMA Chef’s Knife and finely chop your garlic. Then slice onion, bell pepper, and mushrooms into thin strips.
  3. Heat up a pan with oil or butter (or both for best results).
  4. Fry your pork chops on high heat for 1-2 minutes per side on high heat. Add a generous amount of salt and pepper to each side.
  5. Then place the pock chops in an oven safe casserole dish.
  6. On the pan add a bit more grease and then cook your onion, garlic, mushrooms, and bell peppers on medium heat for 5-7 minutes. When done, sprinkle them over the pork chops in the casserole.
  7. Now it’s time to make the sauce in the pan. Add paprika, salt, can of diced tomatoes, cooking cream and crumble in the vegetable bouillon cube. Let it simmer for a few minutes and then pour the sauce over your casserole.
  8. Bake the casserole in your oven for 30 minutes.
  9. While the casserole is cooking, boil your bulgur according to box instructions.
  10. Serve pork chop casserole with fresh parsley on top and a side of bulgur.

 

Here’s a super easy and delicious recipe for a savory pork chop casserole. It’s a meal we had often as kids. Pork chops are easy for a busy work day dinner. If you want to replace the bulgur with something else, you can either make rice, baked potatoes or mashed potatoes. Some simple pasta penne also makes for a nice side and they go great with the sauce.

Can I use other vegetables?

In the classic pork chop casserole dish you pretty much always use onion, mushrooms and bell pepper. But if you for instance don’t like mushrooms, you can easily leave them out and add some other veggies. Zucchini, diced carrot or cauliflower fits this meal perfectly. You can also use a mix of red, green, and yellow bell peppers if you want to amp up the color presentation a bit! 

If you want to make a luxury version of this recipe, try cooking up a pack of bacon and add the bacon on top of the casserole as it comes out of the oven. WHOA!

A healthy version

If you’re going for a more healthy version of this recipe, try using a cooking cream with a lower fat percentage. No matter which cooking cream you use, the cause will be a little thin which is the intention in a meal like this - so don’t worry about thinning out the sauce if you use a low fat cooking cream.
