Description
Easy 4-Step recipe for a delicious one-pot with chicken and sweet potatoes. One-pots are awesome for an easy dinner for 1 or 2 people or even if you’re having guests over. We always make large portions so we can freeze the leftovers. That way you have super easy dinner for another day. This is affordable, healthy, and delicious dinner in just 30 minutes!
Ingredients
7.94 oz (225 g) chicken breast
0.5 yellow/white onion
1.5 garlic clove
1.5 teaspoon garam masala
1 teaspoon paprika
1 teaspoon chiliflager
3.53 oz (100 g) chopped tomato, canned
0.85 cups (200 ml) coconut milk
4.41 oz (125 g) sweet potato
0.3 red bell pepper
0.1 bundle fresh parsley
salt/pepper
7.05 oz (200 g) rice
Directions
- Grab your razor sharp KUMA Chef’s Knife or KUMA Santoku and slice onion into strips. Smash garlic between cutting board and side of blade and then gently slice into small pieces. Peel sweet potatoes and chop them plus bell pepper into small dice. Cut parsley to fine pieces.
- Cook rice after packaging instructions.
- Heat up a pot with a bit of oil in it. Add onion and garlic to sauté until golden brown and then add chicken. Add spices and mix.
- Add chopped sweet potatoes and cook for 2-3 minutes. Then add chopped tomatoes and coconut milk. Bring to a boil and let it simmer for 10-15 minutes. A few minutes before it’s done, add bell peppers and parsley. Taste with salt and pepper. Enjoy!
