Ingredients:
4 small cooked lobsters
1 tbsp butter
1 1/2 tsp onion, minced
2 tbsp flour
1 1/2 cups milk, scalded
1/4 tsp salt
2 tbsp chopped parsley
1/3 cup heavy cream
2 tsp lemon juice
1 tbsp dry sherry
1 tsp English mustard
Salt and pepper, to taste
1/4 cup Parmesan cheese, grated
1/4 cup soft butter
Directions:
1. Split lobsters in halves lengthwise. Carefully remove the meat from claws and tail. With your KUMA Chef's Knife, cut meat into pieces and put it back into the shell.
2. Heat butter in a saucepan. Add onion and cook gently for 3 minutes. Stir in flour and cook until golden. Remove from heat and add hot milk. Add salt and parsley, then cook over moderate heat, stirring constantly. Bring mixture to a boil, then reduce to low heat. Simmer for 20 minutes.
3. Add heavy cream, lemon juice, sherry, and mustard to sauce. Season with salt and pepper.
4. Preheat broiler and arrange lobster shells in a shallow pan. Spoon sauce over lobster meat. Sprinkle with Parmesan cheese and dot with butter.
5. Broil for about 5 minutes, or until golden brown. Serve with remaining sauce.
