Juicy Meatloaf Topped with Bacon

Description

Easy and delicious recipe for a homemade juicy meatloaf in bacon wrap. It is baked in the oven, making it super easy to make. You can serve your meatloaf with many things such as baked potatoes, sauce, and a good salad.

 

Ingredients

0.5 yellow/white onion

1 garlic clove

7.05 oz (200 g) ground pork

1 egg

0.5 teaspoon dried thyme

0.5 tablespoon flour

salt/pepper

0.13 cups (0.3 dl) water

0.5 pork bouillon cube

2.29 oz (65 g) bacon strips

 

Directions

  1. Preheat oven to 355 F (180 C).
  2. Grab your KUMA Chef’s Knife and cut garlic and onion into fine pieces.
  3. Mix meat with spices, egg, flour, onion, and garlic.
  4. Boil a bit of water and dissolve the bouillon cube in it. When it has cooled down a bit, add it to the meat mixture.
  5. Grease an oven-safe casserole and start forming your meatloaf.
  6. Add bacon strips on top over the meatloaf and bake in the oven for 30-40 minutes. Check after the 30 minute mark to make sure it looks good as all ovens behave differently.

While it cooks you can clean the kitchen, set the table, or maybe even whip together a nice side dish like a salad or some potatoes.

This meatloaf is made of a simple ground pork mixture with egg, flour, bouillon, and spices. Then you just form your loaf and put it in an ovensafe dish before placing bacon strips all over the top. We like to serve our meatloaf with baked potatoes, sauce, and a good salad. The possibilities are endless though, and you can serve with many other sides as well. As mentioned above one of the best things about a classic meatloaf is that it gets baked in the oven. It more or less takes care of itself as it cooks. Furthermore, the prep time for a meatloaf is minimal which is also something we love when cooking dinner after a busy day.

We have added bacon strips on top of our meatloaf for additional flavor and juiciness. You can also add Serrano ham instead if you wish. It’s a very delicious alternative to bacon and is a little less greasy.

What should I serve with meatloaf?

A classic meatloaf can be served with many different side dishes, making planning for this meal quite easy. For example some creamy scalloped potatoes or our easy baked thyme potatoes would be amazing with meatloaf. You could also serve a yummy sweet potato salad or a green bean salad with feta cheese.
