Tuna Sandwich with Spinach and Spicy Homemade Tuna Salad

Ingredients
Tuna Salad
1 egg
0.3 red onion
0.1 red bell pepper
1 tablespoon jalapeños
3.7 oz (105 g) tuna, canned
2 tablespoons mayo
1.5 tablespoon creme fraiche
1 tablespoon sweet chili sauce
0.5 teaspoon chili sauce
1 teaspoon lemon juice
salt/pepper
Other
2 whole wheat sandwich buns
2 tablespoons mayo
0.35 oz (10 g) fresh spinach
4 cucumber slices
0.5 avocado
0.71 oz (20 g) pickled red onions
Directions
- Bring a pot of water to a boil. When it boils drop in your egg and boil it for 9-10 minutes.
- When the time is up, drain the water and fill the pot with cold water to cool off the egg.
- Grab your favorite KUMA kitchen knife and slice red onion, jalapeños, and bell pepper into fine pieces.
- Drain tuna.
- Peel onion and slice it into small dice. KUMA Paring Knife or an egg divider is great for this (first divide the eggs in one direction and then turn the egg and divide in the opposite direction).
- Add all tuna salad ingredients in a bowl and gently mix together.
- If you want it more creamy you can add a little more creme fraiche.
- Taste with more lemon juice, salt, and pepper if necessary. Then set it aside.
- Cut and cucumber avocado into roughly quarter inch slices.
- Toast the sandwich buns. Then slice them in half with your KUMA Bread Knife and spread a layer of mayo on both the top and bottom bun.
- Build your sandwich with spinach, tuna salad, cucumber slices, avocado slices, and pickled red onions.
- Serve immediately.

We spread the insides of the bun with some mayo and then build our sandwich with our homemade chili tuna salad, fresh spinach, avocado, cucumber, and pickled red onions. Easy meal prep ideas for lunch and dinner
Tuna sandwiches are ideal for meal prepping! You can with success make a large batch of tuna salad and keep it in the fridge for 3-5 days. Simply scale up the ingredients to match the number of sandwiches you wish to make. That makes it very easy to create a finished sandwich when you need it or the day before (we wouldn’t create the finished sandwich many days in advance as the ingredients stay fresher individually). Alternatively if you do wish to mass produce and finish building them all at once, you could freeze them in freezer-safe bags or containers, and when you need a sandwich you let it defrost and then toast it. If you opt for this method, don’t add spinach as it’ll turn bad when frozen and then heated.
