Greek Gyros with Chicken Kebab Recipe

Recipe for delicious Greek gyros with chicken kebab, tzatziki and picked red onions. We’ve made them with our homemade flatbread so it just doesn’t get any better. Read on to learn this simple and delicious recipe!



Chicken Kebab

15.87 oz (450 g) chicken breast

0.63 cups (1.5 dl) yoghurt

1 tablespoon lemon juice


1 yellow onion

2 garlic cloves

3 tablespoons paprika

2 teaspoon ground coriander

1 teaspoon chili sauce

0.5 teaspoon chili flakes


0.85 cups (2 dl) water

1 teaspoon salt

0.53 oz (15 g) yeast

10.58 oz (300 g) flour


0.5 cucumber

2 tomatoes

0.25 bundle fresh parsley

Pickled Red Onions

2 red onions

0.85 cups (2 dl) vinegar

3 oz (85 g) white sugar


0.5 cucumber

1 garlic clove

10.58 oz (300 g) Greek yoghurt




  1. Start by making the pickled red onions. Grab your favorite sharp KUMA knife and slice the red onion in circles. Put the onions in a glass with a lid you can close (the glass should be somewhat thick so it can hold up a boiled liquid). In a pot, bring vinegar to a boil and add sugar. Mix to incorporate and let it boil for a minute or two. Then carefully pour the sugar vinegar over the red onions. 
  2. Put the lid on the glass and let it cool down. Eventually you can put it in the fridge, but we don’t do that immediately as the hot contents will require your fridge to work more to cool down, essentially wasting energy.
  3. Time to marinade the chicken.
  4. Mix yoghurt with lemon juice, spices, and chili sauce. Grade onion and garlic on a grater and add it to the yoghurt mix. Stir around thoroughly to incorporate everything. Now you have your marinade. Add the whole chicken breasts, stir again to make sure all chicken is covered in marinade, and then put everything in the fridge to rest.
  5. Time to make the dough for the flatbread. Start by mixing yeast into lukewarm water and make sure it’s well incorporated. Then add salt.
  6. Add flour little by little while kneading thoroughly. If you use a machine to knead make sure it’ll keep kneading until the dough lets go of the edges of your bowl.
  7. Put a towel over the bowl containing your dough and put it aside to rise for 45 minutes somewhere a bit warm if possible.
  8. Now let’s make the tzatziki. Chop up cucumber and garlic to fine pieces and put them in a bowl along with Greek yoghurt and salt. Mix well. It will become thinner than a usual tzatziki as we don’t drain the cucumber, but in our opinion this is just fine as it makes the tzatziki work more as a dressing, which is exactly what we need in this recipe.
  9. Grab your KUMA knife again and cut cucumber and tomato. Put them aside for later when we start building our gyros flatbread. 
  10. Now it’s time to cook the flatbread. Heat up a dry pan to medium heat (no grease). Collect the dough and then divide it into 4 equally sized pieces. Roll each piece out to a circle. They have to be very thin. You can add a bit of flour on the table to make sure the dough won’t stick as you roll it out.
  11.  Cook your breads on the pan one at a time. Cook it on one side for 30-40 seconds, then flip it and cook the other side for another 30-40 seconds. You should start seeing some large air bubbles in the bread.
  12. Put the finished bread on a baking rack with a towel covering them up.
  13. When all the bread is done, add some oil to the pan and turn down the heat a bit.
  14. Fry the chicken. The marinade will make it so the chicken won’t fry in the traditional sense but it will simmer. Don’t worry as this is the intention.
  15. When the chicken is cooked take it off the heat and onto a cutting board. With your razor sharp KUMA knife cut the chicken in thin slices and put them back on the pan. Fry them for a couple of minutes so all the kebab gets marinated.
  16. Time to build! Start by adding a flatbread to a plate and then spread with tzatziki, fresh cucumber, fresh tomato, chicken kebab, pickled red onions and finish off with fresh parsley on top. You now have a gorgeous Greek gyros chicken kebab served in homemade flatbread. YUM-MY!

It sounds like a lot but most of these elements are super easy and simple to make! This is so good as a comfy dinner after a busy workday but also works perfectly as a weekend dinner where things have to be a little extra special.

Can I use something else other than flatbread?
Yes, you can easily use other types of bread such as naan, pita, or tortillas. The reason we like to use flatbread is to go all out on the Greek theme with gyros.

What can I prepare ahead of time?
Greek gyros is easy dinner that you can easily prepare the day before. Actually you can marinate the chicken for a full 24 hours before it has to be used. You can also make the flatbread a day before and just heat them up in the oven before serving if that fits your schedule better, but we do prefer making them right before serving as they’re more fresh that way.
