Easy Creamy Cold Potato Salad Recipe with Radishes and Fresh Asparagus

Easy and delicious recipe for a creamy summer style potato salad with fresh asparagus, radishes, and a homemade chives dressing.
Ingredients
12.35 oz (350 g) potatoes
4.41 oz (125 g) creme fraiche
1.5 tablespoon mayo
2 tablespoons milk
0.5 tablespoon powdered sugar
0.8 teaspoon sweet mustard
0.8 teaspoon onion powder
0.5 tablespoon white wine vinegar
0.3 white/yellow onion
0.3 bundle fresh chives
0.5 bundle fresh asparagus
0.3 bundle radishes
Directions
- Cook potatoes until they are tender. Drain and set aside to cool off.
- Mix creme fraiche, mayo, milk, powdered sugar, mustard, onion powder, and white wine vinegar in a bowl. Whisk it thoroughly to ensure it’s fully combined.
- Chop onion and chives into fine pieces with your favorite KUMA kitchen knife. Then mix them into the dressing and taste with salt and pepper (save some of the chives for garnish). Let the dressing rest in the fridge for a couple of hours if you have the time. If you don’t, no worries.
- When potatoes are cold slice them into smaller pieces.
- Break off the ends of the asparagus. Boil a pot of water and add asparagus to the boiling water. Then remove the pot from the heat.
- Let the asparagus stay in the hot water for 5-6 minutes and then drain the water.
- Slice radishes as seen in the recipe picture.
- Mix the potatoes into the dressing along with asparagus and radishes (but save a few radishes for garnish).
- Serve the potato salad in a bowl and top with your extra radish slices and some more fresh chives.
- Serve right away or set it in the fridge until you’re ready to eat.

Potato salad with asparagus and radishes
We love adding a little green to our potato salads. In this recipe we have added fresh asparagus and radishes but you can also add things like peas, beans, diced carrots or other veggies. However, if you want to use vegetables that contain a lot of water such as cucumber or tomatoes, keep in mind that the liquid from them can thin out the dressing a bit, so don’t add a whole lot of them. Adding a little bit is fine, though, and tomato can give a nice extra flavor to a fresh potato salad.
Homemade cold potato salad recipe
As mentioned above it is actually not that difficult to make your own homemade high quality potato salad. The dressing we have used in this recipe is a simple one with chives and onion. Don’t leave out fresh herbs as they add so much amazing flavor to a potato salad, but you can use other herbs than chives if you wish. Dill or parsley is another great candidate in our opinion.
