Ingredients

Leek Soup

2 leeks

1 yellow/white onion

10.58 oz (300 g) potatoes

3 cups (7 dl) water

1 chicken bouillon cube

0.42 cups (1 dl) heavy cream

salt/pepper

7.05 oz (200 g) diced bacon

0.5 bundle fresh chives

 

Directions

  1. Peel potatoes with your KUMA Paring Knife or a traditional peeler. Clean leeks.
  2. Chop leeks, potatoes, and peeled onion into rough dice.
  3. Heat up a pot with a little grease in it. Cook bacon dice until crispy and put them aside in a bowl.
  4. Keep the grease inside the pot.
  5. Sauté onions until soft and then add leeks and potatoes. Cook for a few minutes.
  6. Add water and crumble in your bouillon cube. Let it simmer on  medium heat for 20 minutes until vegetables are tender.
  7. Remove pot from heat and pour a bit of the water into a separate bowl so we don’t make the soup too thin (you may need it later to thicken).
  8. Add cream and use a hand blender to blend the soup into a smooth consistency. If it’s too thick add a bit more of the water you put aside.
  9. Taste with salt/pepper.
  10. Serve with crispy bacon and finely chopped chives on top.
