Creamy Leek Soup with Crispy Bacon Dice Recipe

Smooth Potatoes & Leek Soup with Heavy Cream Recipe

Prep time: 10 minutes — Cook time: 20 minutes — Total time: 30 minutes — Serving: 2 people

Easy dinner recipe for a creamy and simple leeks soup with potatoes and crispy bacon. The best soup recipe with leeks, potatoes and topped with fried pork.

Leek Soup

2 leeks

1 yellow/white onion

10.58 oz (300 g) potatoes

3 cups (7 dl) water

1 chicken bouillon cube

0.42 cups (1 dl) heavy cream

7.05 oz (200 g) diced bacon

0.5 bundle fresh chives

  1. Peel potatoes with your KUMA Paring Knife or a traditional peeler. Clean leeks.
  2. Chop leeks, potatoes, and peeled onion into rough dice.
  3. Heat up a pot with a little grease in it. Cook bacon dice until crispy and put them aside in a bowl.
  4. Keep the grease inside the pot.
  5. Sauté onions until soft and then add leeks and potatoes. Cook for a few minutes.
  6. Add water and crumble in your bouillon cube. Let it simmer on  medium heat for 20 minutes until vegetables are tender.
  7. Remove pot from heat and pour a bit of the water into a separate bowl so we don’t make the soup too thin (you may need it later to thicken).
  8. Add cream and use a hand blender to blend the soup into a smooth consistency. If it’s too thick add a bit more of the water you put aside.
  9. Taste with salt/pepper.
  10. Serve with crispy bacon and finely chopped chives on top.

Best soup recipe with leeks and potatoes

Here you get the recipe for a really delicious leek soup with potatoes, heavy cream, crispy bacon and fresh chives. Soup is always a hit on a busy weekday when dinner has to be quick and simple but still delicious and satisfying. At the same time it is also cheap to make and we love a budget friendly and affordable dinner recipe. If you are looking into budgetting we can recommend introducing a weekly soup night - the savings really add up over time, and it also removes stress knowing you have this simple dinner once a week.

Easy dinner recipes for family and kids

This leek soup with potatoes is so yummy and creamy. It’s a very mild soup that most people will like. We like making soup for the family sometimes as it’s a dinner for children and adults alike, and it’s easy to make so you can spend more time together. And everything with bacon on top tastes good, right?! We also top with fresh chives which you could replace with parsley if you’re more into that - either way some kind of fresh herb on top really is a nice touch both for the presentation and the overall flavor.

Healthy version of bacon

We said it above and we’ll say it again here; topping your food with bacon is rarely a bad idea. Soup is no exception as the smooth and creamy soup combined with the crispy and savory bacon is just a perfect combination of flavor and texture. If you want a less fatty alternative you can fry some Serrano ham or Parma ham instead and you’ll still get that crispy, savory element but with less grease. Alternatively you could also use turkey bacon.

Easy dinner ideas and healthy meal prep ideas

You can make a simple soup with many different types of vegetables, making soup in general wonderful on so many levels. It is first and foremost delicious but is also cheap to make. It’s a really quick dinner, and you can cook it in large batches. This makes it a great choice if you’re looking for healthy meal prep ideas. We like to cook a large batch and put it in freezer-safe containers. That way you have a lot of quick dinners on hand whenever you need them!

What type of cream to use?

You can use the cream that you prefer. We use a heavy cream here as we like the nice and creamy result it gives you. If you want a more fat free version you can use cooking cream instead.

Easy soup recipes on a busy worknight

After a long day at work it’s just nice to know that dinner will be simple, fast, and satisfying. We love making soups on days like that - or if you following the meal prepping ideas above, you can simply just pull a finished soup right out from the freezer and put it in a warm pot to defrost. It doesn’t get much easier and we love that!
