Indian Lentil Casserole - Flavor Packed Vegetarian Dinner

Description

The easiest recipe for Indian lentil casserole which is filling, packs a heavy punch of FLAVOR, and takes just over half an hour to make. The casserole just takes care of itself and voila, a creamy, delicious and healthy lentil dish is ready for you to eat.

 

Ingredients

1 white/yellow onion

2 garlic cloves

1 teaspoon garam masala

1 teaspoon paprika

0.5 teaspoon curry

0.5 teaspoon chili flakes

2 potatoes

2 carrots

7.05 oz (200 g) chopped tomatoes, canned

0.42 cups (1 dl) red lentils

0.84 cups (2 dl) water

0.7 cups (165 ml) coconut milk

1.76 oz (50 g) creme fraiche

 

Directions

  1. Peel carrots and potatoes with your KUMA Paring Knife and cut them along with onion and garlic into fine dice using your KUMA Chef’s Knife or Santoku.
  2. Heat up a pot with some oil or butter.
  3. Add onion, garlic, potato dice, and carrot dice into the pot.
  4. Sauté for a few minutes until veggies turn soft.
  5. Add spices and stir a little so they get a quick fry in order to activate the flavors.
  6. Now add the dried red lentils, water, chopped tomatoes, and coconut milk.
  7. Let the dish simmer on low heat for 15-20 minutes so it thickens.
  8. Taste with salt and pepper.
  9. Serve with creme fraiche on top.

This is one of our backup dishes. A true lifesaver! Indian lentil casserole is a sure shot when dinner has to be fast and simple, and all of the ingredients (minus the creme fraiche which adds a lot but isn’t crucial) is something we often have in our kitchen.

This meal, like many Indian recipes, is packed with wonderful flavor. It also doesn’t take a lot of time to make, and it is a flexible meal in the sense that you can add whichever vegetables you’d like. Thus it is a great dish to make when you want to clear out your vegetable drawer. We have made it with potatoes, carrots, bell peppers, celery, parsnips, leeks, spring onions, Jerusalem artichokes, etc. etc. 

Indian lentils for dinner

This Indian lentil casserole is made with red lentils which are cheap to buy, lasts forever, taste great, and are very healthy and filling. This also makes any leftovers you may have the ideal lunch the next day.

It resembles Indian Daal quite a bit but it stands out due to the added vegetables which makes the casserole have a bit more filling in it.
