Easy Pasta Salad with Pomegranate, Pesto, Spinach, and Edamame Beans
An easy recipe for the best healthy pasta salad with green pesto, edamame beans, and juicy, crispy pomegranate. We use whole-grain fusilli. A delicious and simple pasta salad recipe that’s filling and good for your health.
3.53 oz (100 g) whole-grain fusilli
1.59 oz (45 g) green pesto
3.53 oz (100 g) edamame beans
0.88 oz (25 g) fresh spinach
- Boil pasta after packaging instructions with a bit of salt.
- Drain pasta and let it cool off when it’s done cooking.
- Mix green pesto with pasta in your salad bowl.
- Clean spinach and chop it to rough pieces with your KUMA Chef’s Knife.
- Clean edamame beans. If they’re frozen, leave them in water to thaw.
- Peel pomegranate and remove all the seeds into your salad bowl.
- Add edamame beans and spinach into the salad bowl and stir to mix everything. If the salad seems too dry, you can add some more pesto or a few tablespoons of olive oil.
- Serve right away or put in the fridge until ready to serve.

We make our pasta salad with whole-grain fusilli pastas to make it even better for your health, more filling, and the texture of the wholegrain pasta just fits the salad so lovely. This recipe is perfect as a side for quick dinner ideas or just a simple and healthy lunch. When we make it for lunch we like to add chicken pieces into the salad as well to make it a more complete meal on its own.
It is one of the best salads if you ask us and it is also quite different. This is thanks to the combination of vegetables, lettuce, pesto, and fruit. You may think it sounds odd with pomegranate in it but we highly recommend giving it a try. The adds a wonderful freshness to the salad which we just love!

Can I replace the edamame beans?
Yes, you can replace the edamame beans with green beans, peas, or sugar snap peas. You can also use cucumber if you wish.
Can I use another kind of pesto?
Yup, you definitely can! Try a red pesto or a bell pepper pesto as your alternative. In general pesto is an amazing way to take your pasta salad to the next level as it adds so much flavor and texture.
