Pasta Salad with Homemade Pesto & Sun Dried Tomatoes Recipe

An easy and delicious recipe for a pasta salad with homemade pesto, cherry tomatoes, green beans, and feta cheese. Perfect for your lunch or as a dinner side dish. You can easily make this the day before you need it.

 

Ingredients

Pesto 

0.5 bundle fresh parsley

0.5 garlic clove

0.21 cups (0.5 dl) vegetable oil

0.3 teaspoon salt

0.53 oz (15 g) almonds

Pasta Salad 

4.41 oz (125 g) conchiglie / pasta shells

0.71 oz (20 g) sun dried tomatoes

3.53 oz (100 g) frozen green beans

3.53 oz (100 g) cherry tomatoes

1.41 oz (40 g) feta cheese

 

Directions

  1. Boil your pasta after packaging instructions in generously salted water.
  2. While pasta cooks, blend all ingredients for the pesto with a hand blender. Voila, you’ve got homemade parsley pesto!
  3. When pasta is 1 min from el dente (done) add the frozen beans and let them rest in the water with the pasta for 1 minute (don’t leave them for much longer or they’ll turn too soft - we want a nice and crispy bite). 
  4. Drain water from pasta and green beans.
  5. Add your homemade parsley pesto and the sun dried tomatoes + a little bit of their oil into the pasta salad.
  6. Mix well and taste with salt and pepper. Slice cherry tomatoes in halves with your KUMA Paring Knife. Add cherry tomato boats and feta cheese on top. Enjoy!

Recipe for the most delicious pasta salad with a homemade parsley pesto. We love pasta salads for lunch or as a good side dish for dinner. They are easy to make, taste great and are one of the more healthy of side dishes. Not only does this one have homemade pesto, it also has green beans, cherry tomatoes, sun dried tomatoes, almonds, and feta cheese!

What can I prepare ahead of time?

The good thing about this pasta salad is it is easy to prepare. You can easily make it a few hours before you need it - even a day or two ahead. Just let the pasta cool down before you put it in the fridge (we’re all about good energy moves). The homemade pesto can definitely last 2-3 days in the fridge.

Can I replace some of the veggies?
Yup, you certainly can. Instead of green beans we can recommend using peas or edamame beans. You can also use cucumber, sun dried tomatoes or sugar snap peas.

Can I leave out the feta?
Yes, you can certainly leave out the feta. We do like using a cheese in this salad, and small pieces of fresh mozzarella work quite well, too. If you want no cheese at all, you can definitely go that route.
