Recipe for green bean salad with feta cheese and cherry tomatoes

The absolute best green bean salad with feta and tomato. This combination of ingredients is go awesome. The thin slices of red onion give the perfect crunchy bite and flavor. We recommend using a great feta cheese for this salad. We generally find that the large blocks have more flavor and a better consistency compared to the pre-sliced cubes.

The entire salad gets turned in olive oil which is seasoned with thyme, salt and pepper. This is one of our utmost favorite salads when we need something quick, easy and delicious that’s not a classic lettuce based salad.

Salad with green beans

For such a salad with green beans you can choose either frozen green beans or fresh ones. We’ve tried both and they both taste great. The fresh green beans tend to cost a bit more than the frozen ones and we find the taste and consistency to be quite similar, so we usually opt for the frozen ones.

When we prepare the green beans we just bring a pot of water to a boil. When it boils we add the beans and remove the pot from the heat. This way to preserve the crispiness and ensure they don’t overcook and turn soft. If you prefer a softer bite in your green beans, you can simply just leave the pot on the heat for a few minutes while they cook.
