Danish Meatloaf in Bacon Wrap (Forloren Hare) Recipe

Traditional Scandinavian Meatloaf Recipe with Bacon Wrap

Description

Easy recipe for Danish meat loaf in bacon wrap known in Denmark as “Forloren hare”. This is traditional food in the small Scandinavian country like our grandmothers used to make it. Served with baked root vegetables and gravy. Oh-so-delicious dinner!

 

Ingredients

Meatloaf 

8.82 oz (250 g) ground pork

1 egg

0.21 cups (0.5 dl) milk

0.21 cups (0.5 dl) oats

0.5 yellow/white onion

1.5 garlic cloves

0.3 bundle fresh parsley

0.5 teaspoon salt

0.5 teaspoon pepper

2.29 oz (65 g) bacon strips

Gravy 

0.63 cups (1.5 dl) water

0.5 pork bouillon cube

0.21 cups (0.5 dl) cooking cream

1 teaspoon corn starch

1 teaspoon currant jelly

0.3 teaspoon brown sauce coloring

salt/pepper

Other 

1.1 lb (500 g) root vegetables mix

0.21 cups (0.5 dl) vegetable oil

 

Directions

  1. Peel root vegetables. Then find your favorite KUMA kitchen knife and cut them into wedges or quarter inch coins.
  2. Put them in a deep baking tray and marinate them in a little oil before seasoning them with salt. Put aside until we’re ready to bake.
  3. Now we make the meatloaf. Cut onion, garlic, and parsley to fine pieces. Then mix all meatloaf ingredients together except for the bacon.
  4. In an oven-safe casserole begin forming a meatloaf from your minced meat mixture. Then add bacon strips across the top and place ends as far towards the bottom side of the meat loaf as possible.
  5. Preheat oven to 390 F (200 C).
  6. Put your root vegetables and your Danish meatloaf into the oven at the same time. Start a 15 minute timer.
  7. Meanwhile boil 0.63 cups (1.5 dl) water and dissolve your half pork bouillon cube in it.
  8. After the 15 minutes have passed, pour your bouillon water over the meatloaf and then put it back inside the oven. Now set a 40 minute timer.
  9. Stir around your root vegetables once in a while to ensure they all get baked evenly.
  10. Add cooking cream and corn starch in a little pot and whisk it thoroughly together to avoid pulps.
  11. When your 40 minute timer goes off, your Danish meatloaf (aka “forloren hare”) is finished. Remove it from the oven and move the meat loaf onto a cutting board. Cover it with a kitchen towel or a piece of tin foil. Any liquid that’s left from the meatloaf in the casserole is needed for our gravy, so use a strainer or colander to pour the liquid into your cooking cream pot without getting any plumps.
  12. Whisk the mixture in your pot thoroughly together. Then put it on medium heat while stirring. The sauce will begin to thicken slowly. Add a few drops of brown sauce coloring and your currant jelly. Taste with salt and pepper.
  13. Serve your root vegetables with Danish meatload and gravy. Enjoy this wonderful and traditional meal!

We serve it with baked root vegetables and the most delicious and creamy sauce. This is actually quire simple dinner to make as it mostly takes care of itself in the oven.

What makes this meal so perfect is that the meatloaf is baked in the oven in its own bath of pork bouillon. This gives you the absolute most delicious base for your sauce. Whisking this base together with a bit of cream and currant jelly gives you the perfect brown gravy.

Can I replace the bacon and root vegetables?

We recommend having some type of crispy element on our Danish meatloaf. Traditionally people use bacon but for an alternative you can also use Serrano ham instead and get really good results. If you want a replacement for root vegetables, some good potatoes goes great with this recipe as well.
