Broccoli- and Potato Mash with Beef Sauce Recipe

Description

Recipe for the classic mashed potatoes with beef sauce but we add a twist of broccoli which only makes the dish better. Simple, budget-friendly, and yummy dinner that’s good for your health!

 

 

Ingredients

Mashed Potatoes 

1.32 lb (600 g) potatoes

0.5 broccoli

0.42 cup (1 dl) milk

0.35 oz (10 g) butter

salt

Beef Sauce 

0.5 white/yellow onion

1 garlic clove

1 carrot

8.82 oz (250 g) ground beef

0.5 teaspoon paprika

2.47 oz (70 g) tomato purée

7.05 oz (200 g) chopped tomatoes, canned

0.5 beef bouillon cube

0.2 cup (0.5 dl) water

salt/pepper

Other 

0.3 bundle fresh parsley

0.88 oz (25 g) parmesan

 

Directions

Mashed Potatoes

  1. Peel potatoes and slice them into smaller pieces with your favorite KUMA kitchen knife. Put them in a pot of water with just enough water to cover them.
  2. Bring the pot a boil. Then turn down the heat a little and boil potatoes until tender.
  3. Cut broccoli into smaller pieces and boil them with the potatoes for the last 5-10 minutes.
  4. Remove pot from heat. Drain from water and blend the boiled potatoes and broccoli with butter. Add milk little by little until you get your desired consistency.
  5. Taste with salt.

Beef Sauce

  1. Cut onion, garlic, and carrot into fine pieces.
  2. Heat up a pot greased with some oil or butter.
  3. Add onion, garlic, and carrots to sauté for 5 minutes.
  4. Add beef and sauté so it gets color all over.
  5. Add paprika and tomato purée.
  6. Crumble in bouillon cube and add water. Stir thoroughly.
  7. Add chopped tomatoes and let it simmer for at least 20-30 minutes (but preferably even longer).
  8. Taste with salt/pepper.
  9. Serve with the warm mashed potatoes in the bottom, top with beef sauce, shredded parmesan and fresh chopped parsley.

Here you get the recipe for a homemade and creamy broccoli and potato mash topped with beef sauce. This is a really good and filling meal that is super easy to make. The beef sauce is even better the day after, so if you want you could with advantage make the sauce the day before you need it (but the broccoli-potato mash should be made right before serving).

This is one of those meals we never get tired of. We wanted to try and sneak some more vegetables into it without messing with the smooth consistency, hence why we blended the broccoli into the mash. This worked out quite well as the broccoli compliments the potato flavor beautifully and you get some extra vitamins that way. Win-win!

A healthy mashed potatoes with beef gravy recipe

You could call this the healthy version of a classic mashed potatoes with beef gravy. The classic beef gravy is made on a roux (a butter and flour sauce) while our sauce here is simply made on chopped tomatoes. This makes it resemble a bolognese sauce a little bit. Furthermore we have added broccoli to the mash which is a perfect way to sneak in a little more green without ruining the consistency and flavor you’ve come to expect from a meal like this. This recipe is great for kids and adults alike.
